Instructions
- Preheat oven to 200°C. Toss sweet potato and butternut squash with olive oil, thyme, salt, and pepper. Roast until tender.
- Cook gluten free lasagna sheets according to package instructions if required.
- In a small bowl, mix cranberry sauce, honey, and lemon juice until smooth.
- In a baking dish, spread a thin layer of ricotta. Add lasagna sheets, roasted vegetables, feta, and mozzarella.
- Repeat layers, finishing with mozzarella on top.
- Bake until bubbly and golden.
- Let rest briefly, drizzle with cranberry glaze, and sprinkle with toasted walnuts before serving.
