- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 cups fresh spinach or kale
- Optional: red pepper flakes, fresh basil for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and sauté 3–4 minutes until softened.
- Stir in garlic and cherry tomatoes; cook 2 minutes until tomatoes begin to soften.
- Add white beans, vegetable broth, coconut milk, tomato paste, basil, oregano, paprika, salt, and pepper.
- Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Add spinach or kale and cook 2–3 minutes until wilted.
- Taste and adjust seasoning. Garnish with basil or red pepper flakes if desired.

- For a thicker stew, simmer a few minutes longer.
- Use full-fat coconut milk for a creamier texture; light coconut milk will yield a lighter broth.
