- ½ cup sun-dried tomatoes, chopped
- 2 cans (15 oz each) white beans, drained and rinsed
- ¾ cup heavy cream or coconut cream
- ½ cup vegetable broth
- ½ tsp dried oregano
- ½ tsp dried thyme
- ½ tsp salt, or to taste
- ¼ tsp black pepper
- ½ cup grated Parmesan-style cheese
- Optional garnish: fresh basil or parsley
Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; cook 30 seconds until fragrant.
- Stir in sun-dried tomatoes and cook for 1 minute.
- Add white beans, vegetable broth, oregano, thyme, salt, and pepper. Simmer for 5 minutes.
- Reduce heat and stir in cream and cheese. Cook for 3-5 minutes until thick and creamy.
- Taste and adjust seasoning. Garnish and serve warm with bread.
Notes
- For dairy-free, use coconut cream and skip the Parmesan or substitute nutritional yeast.
- To make vegan, omit cheese or use a dairy-free alternative.
