Description

Ingredients

  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • ½ cup sun-dried tomatoes, chopped
  • 2 cans (15 oz each) white beans, drained and rinsed
  • ¾ cup heavy cream or coconut cream
  • ½ cup vegetable broth
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • ½ cup grated Parmesan-style cheese
  • Optional garnish: fresh basil or parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; cook 30 seconds until fragrant.
  2. Stir in sun-dried tomatoes and cook for 1 minute.
  3. Add white beans, vegetable broth, oregano, thyme, salt, and pepper. Simmer for 5 minutes.
  4. Reduce heat and stir in cream and cheese. Cook for 3-5 minutes until thick and creamy.
  5. Taste and adjust seasoning. Garnish and serve warm with bread.

Notes

  • For dairy-free, use coconut cream and skip the Parmesan or substitute nutritional yeast.
  • To make vegan, omit cheese or use a dairy-free alternative.
