- 3/4 cup Italian dressing
- 2 tbsp chopped fresh parsley or basil
- Salt and black pepper, to taste
Instructions
- Cook tortellini according to package directions. Drain and rinse under cold water to cool.
- In a large bowl, combine cooked tortellini, tomatoes, cucumber, bell pepper, red onion, olives, and mozzarella.
- Pour Italian dressing over the salad and toss gently to coat.
- Season with salt and black pepper to taste.
- Stir in fresh parsley or basil.
- Chill for at least 15 minutes before serving for best flavor.
