Description
The Absolute Best Lentil Soup: a vegan, gluten-free, creamy and comforting lentil soup that’s deeply flavorful and comes together in about 20 minutes.

- 2 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1½ cups dried red lentils, rinsed
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp turmeric
- ½ tsp salt, or to taste
- ¼ tsp black pepper
- 5 cups vegetable broth
- 1 cup full-fat coconut milk
- 1 tbsp lemon juice
- Optional garnish: chopped parsley or drizzle of olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook for 5 minutes until softened.
- Stir in garlic, cumin, smoked paprika, turmeric, salt, and pepper; cook 30 seconds until fragrant.
- Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 18–20 minutes until lentils are very tender.
- Stir in coconut milk and lemon juice.
- Use an immersion blender to partially blend the soup until creamy, leaving some texture.
- Taste and adjust seasoning. Serve warm with desired garnishes.

- Make ahead: refrigerate leftovers for up to 4 days.
- Freezer-friendly: freeze for up to 3 months in airtight containers.
- Adjust thickness by adding more broth or water as needed.
