Description

The Absolute Best Lentil Soup: a vegan, gluten-free, creamy and comforting lentil soup that’s deeply flavorful and comes together in about 20 minutes.


Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1½ cups dried red lentils, rinsed
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp turmeric
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • 5 cups vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tbsp lemon juice
  • Optional garnish: chopped parsley or drizzle of olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook for 5 minutes until softened.
  2. Stir in garlic, cumin, smoked paprika, turmeric, salt, and pepper; cook 30 seconds until fragrant.
  3. Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 18–20 minutes until lentils are very tender.
  4. Stir in coconut milk and lemon juice.
  5. Use an immersion blender to partially blend the soup until creamy, leaving some texture.
  6. Taste and adjust seasoning. Serve warm with desired garnishes.
