Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or medium casserole dish.
- In a large skillet, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
- Add mushrooms and potatoes, cooking for another 5 minutes.
- Sprinkle flour over vegetables and stir well to coat. Slowly pour in vegetable broth and almond milk, stirring continuously until a thick sauce forms.
- Add peas, thyme, rosemary, salt, and pepper. Simmer for 5–7 minutes until vegetables are tender and sauce is creamy.
- Transfer the mixture to your prepared dish and spread evenly.
- Spoon stuffing on top and drizzle with melted vegan butter if desired.
- Bake for 25–30 minutes, or until the top is golden and the filling is bubbling.
- Cool slightly before serving.
