  • For the avocado rice stack:
  • 2 cups cooked rice
  • 1 ripe avocado, diced
  • 1 tbsp lime juice
  • 2 tbsp chopped fresh cilantro
  • Salt to taste

Instructions

  1. In a bowl, whisk together lime juice, honey, olive oil, garlic, cumin, paprika, salt, and pepper.
  2. Add chicken and coat well. Cover and marinate in the refrigerator.
  3. Cook chicken in a skillet or on a grill over medium heat until caramelized and cooked through. Let rest before slicing.
  4. In a bowl, gently mix cooked rice with diced avocado, lime juice, cilantro, and salt.
