Ingredients
- 8 ounces pasta (any shape)
- 1 cup cooked smoked beef, chopped
- 1 cup cherry tomatoes, halved
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup diced bell peppers
- 1/2 cup taco seasoning
- 1/2 cup grape juice
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Cook pasta until al dente, drain and rinse under cold water.
- In a small bowl, whisk taco seasoning with grape juice.
- In a large bowl combine pasta, smoked beef, tomatoes, beans, corn, cheese, and bell peppers.
- Pour dressing over salad and toss to coat.
