- 3 large sweet potatoes, peeled and thinly sliced
- 1 cup fresh or frozen cranberries
- 1 cup shredded Gruyère or mozzarella cheese
- 1 cup heavy cream
- 1 tbsp maple syrup
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp dried thyme
- ½ cup breadcrumbs
- 2 tbsp melted butter
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a baking dish and arrange a layer of sliced sweet potatoes on the bottom.
- Sprinkle cranberries evenly over the potatoes.
- In a bowl, whisk together heavy cream, maple syrup, salt, pepper, and thyme.
- Pour the cream mixture over the sweet potatoes and cranberries.
- Sprinkle the shredded cheese evenly across the top.
- Mix breadcrumbs with melted butter and sprinkle over the cheese.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 15–20 minutes, or until golden and bubbly.
- Garnish with fresh parsley before serving.
Notes
- Substitute mozzarella for Gruyère if you prefer a milder, meltier cheese.
- Fresh or frozen cranberries both work; adjust sweetness if using tart berries.
- Prepare ahead: assemble up to the breadcrumb butter topping, cover, chill, then bake as directed.
- For a lighter version, use part-skim cheese and evaporated milk in place of heavy cream.
- Leftovers can be reheated in the oven until hot and bubbly.
