Description

Sweet and Savory Pineapple Chicken and Rice: a tropical-inspired, one-pan dinner featuring tender chicken, juicy pineapple, and fluffy rice in a perfectly balanced sweet-and-savory sauce—easy to make for weeknights and meal prep.


Ingredients

  • 500 g boneless skinless chicken breast, cut into bite-size pieces
  • 1 cup long-grain rice, rinsed
  • 1 ½ cups chicken broth
  • 1 cup pineapple chunks, fresh or canned (in juice, not syrup)
  • ¼ cup pineapple juice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce or tamari
  • 1 tbsp honey or brown sugar
  • 1 tbsp olive oil
  • ½ tsp ground ginger
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: chopped green onions or sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet or pan over medium heat. Add chicken and cook until lightly browned on all sides. Remove and set aside.
  2. In the same pan, add onion and garlic. Cook until soft and fragrant.
  3. Stir in rice, chicken broth, pineapple juice, soy sauce, honey, ginger, paprika, salt, and pepper.
  4. Add pineapple chunks and return chicken to the pan. Stir gently to combine.
  5. Cover and simmer on low heat until the rice is tender and liquid is absorbed.
  6. Fluff with a fork, garnish if desired, and serve warm.

Notes

  • You can substitute brown rice for a nuttier texture and more fiber.
  • For a gluten-free option, use tamari instead of soy sauce.
  • If pineapple chunks are large, cut them into bite-size pieces before cooking.
  • Leftovers store well in the fridge for 3–4 days; reheat gently.
  • Garnish with chopped green onions or sesame seeds for extra color and flavor.
