- 500 g boneless skinless chicken breast, cut into bite-size pieces
- 1 cup long-grain rice, rinsed
- 1 ½ cups chicken broth
- 1 cup pineapple chunks, fresh or canned (in juice, not syrup)
- ¼ cup pineapple juice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp soy sauce or tamari
- 1 tbsp honey or brown sugar
- 1 tbsp olive oil
- ½ tsp ground ginger
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- Optional: chopped green onions or sesame seeds for garnish
Instructions
- Heat olive oil in a large skillet or pan over medium heat. Add chicken and cook until lightly browned on all sides. Remove and set aside.
- In the same pan, add onion and garlic. Cook until soft and fragrant.
- Stir in rice, chicken broth, pineapple juice, soy sauce, honey, ginger, paprika, salt, and pepper.
- Add pineapple chunks and return chicken to the pan. Stir gently to combine.
- Cover and simmer on low heat until the rice is tender and liquid is absorbed.
- Fluff with a fork, garnish if desired, and serve warm.
Notes
- You can substitute brown rice for a nuttier texture and more fiber.
- For a gluten-free option, use tamari instead of soy sauce.
- If pineapple chunks are large, cut them into bite-size pieces before cooking.
- Leftovers store well in the fridge for 3–4 days; reheat gently.
