Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the pan. Bake for 10 minutes, then set aside to cool.
- In a small saucepan, combine strawberries, sugar, and lemon juice over medium heat. Cook until berries soften. Stir in cornstarch slurry and simmer until thickened. Blend slightly if desired, then cool completely.
- In a large bowl, beat cream cheese until smooth and creamy. Add sugar and mix until combined.
- Blend in sour cream and vanilla extract. Add eggs one at a time, mixing on low speed until just incorporated. Do not overmix.
- Pour cheesecake batter over the cooled crust and smooth the top.
- Drop spoonfuls of strawberry sauce over the batter. Use a knife or skewer to gently swirl the sauce into the cheesecake.
- Bake for 55–65 minutes, until the center is slightly jiggly but set around the edges.
- Turn off the oven, crack the door slightly, and let cheesecake cool inside for 1 hour.
- Refrigerate for at least 6 hours or overnight before slicing and serving.
