Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
- Stir in milk and vanilla until just combined. Do not overmix.
- Turn dough onto a lightly floured surface and gently pat to about 1-inch thickness. Cut into 6 rounds and place on baking sheet.
- Bake for 15-18 minutes or until golden brown. Cool slightly.
- In a bowl, combine sliced strawberries, sugar, and lemon juice. Let sit 10-15 minutes until juicy.
- Beat heavy cream, powdered sugar, and vanilla until soft peaks form.
- Slice shortcakes in half, spoon strawberries over the bottom half, add whipped cream, then place the top on and finish with more cream and berries. Serve immediately.
