Ingredients

Scale
  • 6 cups crispy rice cereal
  • 4 cups mini marshmallows
  • 3 tbsp unsalted butter
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 20 golden sandwich cookies, crushed
  • 3 tbsp unsalted butter, melted
  • 3 tbsp strawberry gelatin powder
  • 45 drops natural red food coloring, optional
  • 1/2 cup white chocolate chips

Instructions

  1. Line a 9×13-inch pan with parchment paper and lightly grease.
  2. In a large pot over low heat, melt butter. Add marshmallows and stir until smooth.
  3. Remove from heat and stir in vanilla and salt.
  4. Fold in crispy rice cereal until evenly coated.
  5. Press mixture firmly into prepared pan and let set.
  6. In a bowl, combine crushed cookies, melted butter, and strawberry gelatin powder until crumbly. Add food coloring if desired.
  7. Sprinkle strawberry crunch mixture evenly over the cereal layer and gently press down.
  8. Melt white chocolate chips and drizzle over the top.
  9. Refrigerate for about 1 hour until firm, then slice into squares and serve.

Notes

  • Let the bars set completely for clean cuts; chill for at least 1 hour for best sliceability.
  • Store in an airtight container in the refrigerator for up to 3 days.
  • For a lighter version, reduce butter in the crumble or skip the colorant.
  • Try using different cookie flavors to customize the topping (e.g., chocolate or vanilla cookies).
