Description

Strawberry Cream Cheese Muffins are soft, fluffy muffins with a creamy cheesecake-style center and bursts of fresh strawberry flavor, perfect for breakfast, brunch, or a sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, diced
  • For the cream cheese filling:
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk milk, oil, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Gently fold in diced strawberries.
  6. In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  7. Fill each muffin liner halfway with batter. Add a spoonful of cream cheese filling, then top with more batter until about 3/4 full.
  8. Bake for 18-22 minutes, until muffins are golden and a toothpick inserted in the muffin (not the center filling) comes out clean.
  9. Let cool for 5 minutes in the pan before transferring to a wire rack.

Notes

  • For easiest filling, soften cream cheese to room temperature.
  • Do not overmix the batter to keep muffins tender.
  • Fill muffin cups about 3/4 full to leave room for rising and the cream cheese swirl.
  • Use ripe but firm strawberries for best texture.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently before serving.
