  • 2 ripe bananas, mashed
  • ½ cup granulated sugar
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • For the glaze:
  • 1 cup powdered sugar
  • 23 tbsp strawberry puree
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a large bowl, whisk together mashed bananas, sugar, eggs, oil, and vanilla extract.
  3. Stir in pancake mix until just combined.
  4. Gently fold in diced strawberries.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, whisk powdered sugar, strawberry puree, and vanilla until smooth.
  9. Drizzle glaze over cooled bread, slice, and serve.
