Instructions
- Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a large bowl, whisk together mashed bananas, sugar, eggs, oil, and vanilla extract.
- Stir in pancake mix until just combined.
- Gently fold in diced strawberries.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk powdered sugar, strawberry puree, and vanilla until smooth.
- Drizzle glaze over cooled bread, slice, and serve.
