- 2 tbsp rice vinegar
- 1 tsp sugar
- ½ tsp salt
- 400 g salmon fillet
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup mayonnaise
- 2 tbsp chili sauce
- 1 tsp soy sauce
- 1 tsp sesame oil
- Optional: sliced green onions, sesame seeds, or nori sheets for serving
Instructions
- Preheat oven to 190°C and lightly grease a baking dish.
- In a bowl, mix cooked rice with rice vinegar, sugar, and salt. Spread evenly into the baking dish.
- Season salmon with olive oil, salt, and pepper. Bake until cooked through, then flake with a fork.
- In a bowl, combine mayonnaise, chili sauce, soy sauce, and sesame oil.
- Fold flaked salmon into the spicy sauce mixture.
- Spread the salmon mixture evenly over the rice layer.
- Bake until heated through and slightly golden on top.
- Garnish as desired and serve warm, scooping onto nori sheets if preferred.

- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
- To lighten the dish, use light mayonnaise or a yogurt-mayo mix.
