  • 600 g boneless skinless chicken thighs, cut into chunks
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 can coconut milk
  • ½ cup diced tomatoes
  • 1 tbsp lime juice
  • Optional: fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until lightly browned. Remove and set aside.
  3. In the same skillet, sauté onion, garlic, and bell pepper until softened.
  4. Stir in paprika, cumin, chili powder, salt, and pepper. Cook briefly until fragrant.
  5. Pour in coconut milk and diced tomatoes, stirring well.
  6. Return chicken to the pan and simmer until the chicken is tender and sauce thickens.
  7. Stir in lime juice and adjust seasoning if needed.
  8. Garnish with fresh cilantro and serve warm.
