Instructions
- Preheat oven to 350°F (175°C). Do not grease a 9-inch tube pan.
- Sift cake flour with ½ cup of the sugar and set aside.
- In a large bowl, beat egg whites until foamy. Add cream of tartar and salt, then continue beating until soft peaks form.
- Gradually add remaining 1 cup sugar, beating until stiff, glossy peaks form.
- Gently fold in vanilla extract and strawberry gelatin powder. Add food coloring if desired.
- Carefully fold in the sifted flour mixture in batches using gentle strokes to keep the batter airy.
- Spoon batter into the tube pan and smooth the top.
- Bake for 35–40 minutes, until the top springs back when lightly touched.
- Immediately invert the pan and let the cake cool completely upside down.
- Once cooled, run a knife around the edges to release. Slice and serve with whipped cream and fresh strawberries if desired.
