Description

Soft and Sweet Linzer Cookies: A delicate, buttery sandwich cookie enriched with almond flour and warm cinnamon, filled with raspberry or strawberry jam, and lightly dusted with powdered sugar for a bakery-worthy treat. Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/4 cup almond flour
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 cup raspberry or strawberry jam
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk all-purpose flour, almond flour, cinnamon, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add egg, vanilla extract, and almond extract, mixing until smooth.
  5. Gradually mix in dry ingredients until a soft dough forms.
  6. Roll dough out on a lightly floured surface and cut into shapes, cutting a small window in half of the cookies.
  7. Place cookies on baking sheets and bake for 10–12 minutes until set but not browned.
  8. Cool completely. Dust cut-out cookies with powdered sugar.
  9. Spread jam on the solid cookies and sandwich with powdered sugar cookies on top.

Notes

  • Do not overbake; cookies should be pale and just set for soft centers.
  • Roll dough between lightly floured sheets for easier cutting; work quickly to prevent butter from melting.
  • Dust with powdered sugar just before serving for the prettiest finish.
