Description

Slow Cooker Unstuffed Cabbage Rolls – a 5-ingredient, easy comfort dish featuring tender cabbage, seasoned beef or turkey, rice, and a rich tomato sauce all simmered to perfection in the slow cooker for a cozy weeknight meal.


Ingredients

  • 1 lb ground beef or ground turkey
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 medium green cabbage, chopped
  • 1 can (15 oz) tomato sauce
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth or vegetable broth
  • 1 cup uncooked rice
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • Optional: squeeze of lemon or fresh parsley for serving

Instructions

  1. In a skillet, sauté onion and garlic until softened. Add ground beef or turkey and cook until browned.
  2. Transfer the cooked meat mixture to the slow cooker.
  3. Add chopped cabbage, tomato sauce, diced tomatoes, broth, rice, paprika, oregano, parsley, salt, and pepper.
  4. Stir everything together until evenly combined.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours, until cabbage and rice are tender.
  6. Adjust seasoning if needed and stir well before serving.
  7. Garnish with parsley or a squeeze of lemon for brightness.

Notes

  • Rice will absorb liquid as it cooks; if it looks too thick, add a splash of broth.
  • For gluten-free, ensure your broth and tomato products are gluten-free.
  • Leftovers refrigerate well for 3–4 days; reheat gently.
