Description

Slow Cooker Savory Beef Stew Delight: A warm, hearty, and deeply comforting beef stew cooked low and slow in the slow cooker. Tender beef, potatoes, onions, carrots, and celery simmer in a rich, savory broth for a thick, flavorful one-pot meal that’s perfect for busy weekdays, chilly evenings, or make-ahead dinners.

  • 2 lbs beef stew meat, cut into chunks (900 g)
  • 3 tbsp olive oil
  • 1 medium onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 3 cups potatoes, diced (about 450 g)
  • 3 cups beef broth (720 ml)
  • 2 tbsp tomato paste
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 bay leaves
  • Optional: chopped fresh parsley for serving

Instructions

  1. Heat olive oil in a skillet over medium heat and brown the beef on all sides. Transfer to the slow cooker.
  2. In the same skillet, sauté onion, carrots, and celery for 3–4 minutes until slightly softened.
  3. Add garlic and cook for 30 seconds, then stir in tomato paste and flour.
  4. Transfer vegetable mixture to the slow cooker.
  5. Add potatoes, beef broth, thyme, rosemary, paprika, salt, pepper, and bay leaves.
  6. Stir gently to combine.
  7. Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender and stew is thick.
  8. Remove bay leaves, adjust seasoning, and serve hot.

Notes

  • Brown the beef well for deeper flavor; do not overcrowd the pan.
  • If the stew isn’t thick enough to your liking, whisk a little more flour with water (slurry) or allow it to cook a bit longer uncovered to reduce excess liquid.
  • Remove bay leaves before serving.
  • Leftovers refrigerate well for up to 3–4 days or freeze for longer storage.
  • Garnish with chopped parsley for a fresh finish.
