- 2 lbs beef stew meat, cut into chunks (900 g)
- 3 tbsp olive oil
- 1 medium onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 cloves garlic, minced
- 3 cups potatoes, diced (about 450 g)
- 3 cups beef broth (720 ml)
- 2 tbsp tomato paste
- 2 tbsp all-purpose flour
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- Salt and black pepper to taste
- 2 bay leaves
- Optional: chopped fresh parsley for serving
Instructions
- Heat olive oil in a skillet over medium heat and brown the beef on all sides. Transfer to the slow cooker.
- In the same skillet, sauté onion, carrots, and celery for 3–4 minutes until slightly softened.
- Add garlic and cook for 30 seconds, then stir in tomato paste and flour.
- Transfer vegetable mixture to the slow cooker.
- Add potatoes, beef broth, thyme, rosemary, paprika, salt, pepper, and bay leaves.
- Stir gently to combine.
- Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender and stew is thick.
- Remove bay leaves, adjust seasoning, and serve hot.
Notes
- Brown the beef well for deeper flavor; do not overcrowd the pan.
- If the stew isn’t thick enough to your liking, whisk a little more flour with water (slurry) or allow it to cook a bit longer uncovered to reduce excess liquid.
- Remove bay leaves before serving.
- Leftovers refrigerate well for up to 3–4 days or freeze for longer storage.
- Garnish with chopped parsley for a fresh finish.
