  • 4 boneless skinless chicken thighs or breasts
  • 1 cup long-grain white rice, rinsed
  • 2½ cups chicken broth
  • 2 tbsp olive oil
  • 3 cloves garlic, minced

  • 1 tsp dried thyme
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice

Instructions

  1. Lightly grease the slow cooker insert with olive oil.
  2. Add rinsed rice evenly to the bottom of the slow cooker.
  3. Place chicken on top of the rice.
  4. Sprinkle garlic, oregano, thyme, paprika, salt, pepper, and lemon zest over the chicken.
  5. Pour chicken broth and lemon juice evenly over everything.
  6. Cover and cook on low for 3–4 hours or until chicken is tender and rice is cooked.
  7. Fluff rice gently and stir to combine before serving.
  8. Garnish with fresh parsley and extra lemon if desired.
