- 2 lbs potatoes, peeled and cubed
- 1 medium onion, diced
- 1 cup corn (fresh, frozen, or canned)
- 1 can (10.5 oz) cream of chicken or cream of mushroom soup
- 1 cup sour cream
- 1½ cups shredded cheddar cheese, divided
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp onion powder
- Fresh parsley for garnish
Instructions
- Brown the halal ground beef or turkey sausage in a skillet over medium heat. Drain excess fat if needed.
- Add potatoes, onion, corn, and the cooked meat to the slow cooker.
- In a bowl, mix soup, sour cream, 1 cup cheddar cheese, garlic powder, paprika, salt, pepper, and onion powder.
- Pour the mixture over the ingredients in the slow cooker and stir to combine.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are tender.
- Sprinkle the remaining ½ cup cheddar cheese on top during the last 10–15 minutes of cooking to melt.
- Garnish with fresh parsley and serve warm.
