Description

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 medium potatoes, sliced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 cup beef broth
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1½ cups shredded cheddar cheese

Instructions

  1. In a skillet, cook ground beef, onion, and garlic over medium heat until beef is browned. Drain excess fat if needed.
  2. Layer sliced potatoes at the bottom of the slow cooker.
  3. Add beef mixture on top, followed by kidney beans, corn, and diced tomatoes with green chiles.
  4. Pour over beef broth and sprinkle with chili powder, paprika, oregano, salt, and pepper.
  5. Cover and cook on low for 6 hours (or high for 3–4 hours) until potatoes are tender.
  6. In the last 10 minutes, sprinkle cheddar cheese over the top, cover, and let it melt.
