Description

Slow Cooker Beef Stew: A classic, cozy, rich beef stew that cooks low and slow for deep, hearty flavor. Tender chunks of beef, soft vegetables, and a savory, comforting broth come together effortlessly in the crockpot—this is the kind of old-fashioned stew everyone loves and asks for again.


Ingredients

  • 1.52 lbs beef stew meat, cut into chunks
  • 3 large carrots, sliced
  • 3 medium potatoes, diced
  • 1 small onion, diced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 3 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce (halal)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • 2 bay leaves
  • Salt and black pepper to taste
  • 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
  • Optional: fresh parsley for serving

Instructions

  1. Add beef, carrots, potatoes, onion, celery, and garlic to your slow cooker.
  2. Stir in beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, bay leaves, salt, and pepper.
  3. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is tender.
  4. For thicker stew, whisk cornstarch with water and stir it in during the last 30 minutes of cooking.
  5. Remove bay leaves, taste, and adjust seasoning.
  6. Serve warm with parsley on top.

Notes

  • This recipe is Halal as noted for Worcestershire sauce.
  • Leftovers refrigerate well for up to 3–4 days; freeze for longer storage.
  • To thicken without cornstarch, you can simmer uncovered on high for the last 30 minutes if your slow cooker allows, though timing may vary.
  • Best served with a sprinkle of fresh parsley on top.
