- 3 cups beef broth

- 1 tsp dried thyme
- ½ tsp black pepper
- Salt to taste
- 3 tbsp cornstarch mixed with 3 tbsp cold water (slurry)
- 6 slices thick bread (Texas toast or country bread)
- 4–6 cups mashed potatoes
- Optional: parsley for garnish
Instructions
- Season the chuck roast with salt, pepper, and paprika.
- Heat olive oil in a skillet and sear the roast on all sides until nicely browned.
- Transfer the roast to the slow cooker.
- Add onion, garlic, beef broth, Worcestershire sauce, tomato paste, and thyme.
- Cover and cook on low for 8–9 hours or high for 4–5 hours, until beef is fall-apart tender.
- Remove beef, shred it, and return it to the slow cooker.
- Stir in the cornstarch slurry, cover, and cook 10 minutes to thicken the gravy.
- To serve, place a slice of toast on the plate, top with mashed potatoes, then pile on the shredded beef and gravy.
- Garnish with parsley if desired.
