Ingredients
- 3 lbs beef chuck roast (halal)
- 1 medium onion, sliced
- 3 garlic cloves, minced
- 3 cups beef broth
- 2 tbsp Worcestershire sauce (halal)
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 tsp paprika
- Salt and pepper to taste
- 2 bay leaves
Instructions
- Place sliced onions and garlic in the bottom of the slow cooker.
- Season the chuck roast with salt, pepper, paprika, thyme, and parsley. Place it on top of the onions.
- In a bowl, whisk beef broth, Worcestershire sauce, and tomato paste. Pour over the roast.
- Add bay leaves, cover, and cook on low for 8–9 hours or on high for 4–5 hours until the beef is fork-tender.
- Remove the roast and shred it with two forks. Return to the slow cooker and mix with the gravy.
- To serve, place a slice of toasted bread on a plate, top with mashed potatoes, add shredded beef, and spoon gravy generously over everything.
