  • 3 lbs beef chuck roast (halal)
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 3 cups beef broth
  • 2 tbsp Worcestershire sauce (halal)
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Place sliced onions and garlic in the bottom of the slow cooker.
  2. Season the chuck roast with salt, pepper, paprika, thyme, and parsley. Place it on top of the onions.
  3. In a bowl, whisk beef broth, Worcestershire sauce, and tomato paste. Pour over the roast.
  4. Add bay leaves, cover, and cook on low for 8–9 hours or on high for 4–5 hours until the beef is fork-tender.
  5. Remove the roast and shred it with two forks. Return to the slow cooker and mix with the gravy.
  6. To serve, place a slice of toasted bread on a plate, top with mashed potatoes, add shredded beef, and spoon gravy generously over everything.

  • Leftover gravy can be stored in the fridge for up to 3 days.
