Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and cook until softened.
- Stir in garlic and bell pepper, cooking for 1 minute until fragrant.
- Add potatoes, crushed tomatoes, oregano, basil, 1/2 tsp red pepper flakes, salt, and pepper.
- Pour in the chicken broth and bring to a gentle boil.
- Reduce heat and simmer for 20 minutes, or until the veggies are tender.
- Add shredded chicken and ditalini pasta, stirring well.
- Simmer for 10-12 minutes, until the pasta is cooked al dente.
- Taste and adjust seasoning as needed.
