  • 1 can (14 oz) crushed tomatoes
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 cup ditalini pasta
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • Optional: fresh parsley or Parmesan (halal) for topping

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and cook until softened.
  2. Stir in garlic and bell pepper, cooking for 1 minute until fragrant.
  3. Add potatoes, crushed tomatoes, oregano, basil, 1/2 tsp red pepper flakes, salt, and pepper.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Reduce heat and simmer for 20 minutes, or until the veggies are tender.
  6. Add shredded chicken and ditalini pasta, stirring well.
  7. Simmer for 10-12 minutes, until the pasta is cooked al dente.
  8. Taste and adjust seasoning as needed.
  9. Serve hot, topped with fresh parsley or Parmesan (halal) if desired.
