Description

  • 34 lb beef chuck roast
  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 packet onion soup mix (halal-friendly)
  • 3 cups beef broth
  • 1 tbsp Worcestershire sauce (ensure halal)
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 large carrots, chopped
  • 34 potatoes, chopped
  • Optional: fresh parsley for serving

Instructions

  1. Season the roast generously with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until browned.
  3. Place sliced onions and garlic in the bottom of the crock pot.
  4. Set the seared roast on top.
  5. Add carrots and potatoes around the roast.
  6. Sprinkle onion soup mix and thyme over everything.
  7. Pour beef broth and Worcestershire sauce around (not directly on top of) the roast.
  8. Cover and cook on low for 8–9 hours or high for 4–5 hours, until the roast is fork-tender.
  9. Shred or slice and serve with the flavorful onion gravy.
  10. Garnish with parsley if desired.

Notes

  • For gluten-free, use a gluten-free onion soup mix and halal-certified Worcestershire sauce.
  • Brown the meat well to deepen flavor before slow cooking.
  • If you prefer a thicker gravy, whisk a slurry of 1–2 tsp cornstarch with cold water and stir into the juices during the last 15 minutes of cooking.
  • Let the roast rest 10 minutes before slicing for juicier servings.
