- 3–4 lb beef chuck roast (halal)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme or rosemary
- 1 onion, sliced
- 4 carrots, cut into chunks
- 4–5 potatoes, quartered
- 3 cups beef broth (halal)
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt, pepper, garlic powder, onion powder, and herbs.
- Sear the roast on all sides until nicely browned, about 2–3 minutes per side.
- Add onions, carrots, and potatoes to the bottom of the crock pot.
- Place the seared roast on top of the vegetables.
- Pour beef broth over everything.
- Cover and cook on LOW for 8 hours until the beef is tender and easily pulls apart.
- Slice or shred the roast and serve warm with vegetables and broth.
Notes
- For extra depth, sear the roast thoroughly to develop a rich fond.
- If you prefer thicker gravy, whisk a slurry of 1–2 tablespoons cornstarch with cold water and stir into the hot broth during the last 15 minutes of cooking.
- Leftovers refrigerate well for up to 3–4 days; reheat gently.
