Description

Sausage Potato Soup: Cozy, creamy, and incredibly satisfying, this one-pot Sausage Potato Soup delivers ultimate comfort. Made with halal turkey or beef sausage, tender potatoes, onions, garlic, and a velvety broth, it’s perfect for cozy weeknight dinners, gatherings, and chilly nights.


Ingredients

  • 1 lb halal turkey or beef sausage, sliced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 45 medium potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • 2 cups fresh spinach (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and brown for 4–5 minutes. Remove and set aside.
  2. In the same pot, sauté onion and garlic for 2–3 minutes until fragrant.
  3. Add potatoes, chicken broth, thyme, parsley, salt, and pepper. Bring to a boil, then reduce heat and cook for 12–15 minutes until potatoes are tender.
  4. Return the sausage to the pot and stir in heavy cream and cheddar cheese until melted and creamy.
  5. Add spinach if using and simmer for 2–3 minutes until wilted.
  6. Garnish with fresh parsley and serve warm with crusty bread.

Notes

  • Leftovers refrigerate well for 3–4 days.
  • For a lighter version, substitute half-and-half or milk for the cream, and/or use part-skim cheddar.
  • Make sure sausage and broth are gluten-free if you need a gluten-free option.
  • To freeze, cool completely and store in airtight containers for up to 2 months (note: dairy may separate when thawed; whisk gently to re-emulsify).
