Description

Sausage and Lentil Soup: A cozy, hearty crockpot staple with halal turkey sausage, tender lentils, and Italian-inspired aromatics—perfect for chilly nights, easy weeknight dinners, and family-friendly comfort.


Ingredients

  • 1 lb halal turkey sausage, sliced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 cup dried brown or green lentils, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups chicken or vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp smoked paprika
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • 2 cups fresh spinach or kale
  • Optional: grated Parmesan-style cheese for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown turkey sausage slices for 3–4 minutes, then transfer to crockpot.
  2. Add onion, carrots, celery, garlic, lentils, diced tomatoes, broth, oregano, basil, smoked paprika, salt, and pepper to the crockpot. Stir well.
  3. Cover and cook on low for 7–8 hours or high for 3–4 hours until lentils are tender.
  4. Stir in spinach or kale during the last 10 minutes of cooking until wilted.
  5. Taste and adjust seasoning. Serve warm with cheese if desired.

Notes

  • Can be made entirely in the slow cooker for easy hands-off weeknights.
  • Substitute chicken sausage or any sausage of choice; ensure halal options are used to keep the dish halal.
  • Make it dairy-free by omitting the Parmesan-style cheese.
  • Leftovers refrigerate well for up to 4 days or freeze for up to 3 months.
