  • Crumble topping:
  • ½ cup flour
  • ¼ cup brown sugar
  • ¼ cup cold butter, cubed
  • ½ tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch square baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. In another bowl, whisk together pumpkin purée, brown sugar, white sugar, oil, eggs, vanilla, and milk until smooth.
  4. Gradually add dry ingredients to wet mixture, stirring until just combined.
  5. Pour batter into the prepared pan and spread evenly.
  6. For crumble: in a small bowl, mix flour, brown sugar, and cinnamon; cut in butter with a fork or fingertips until crumbly.
  7. Sprinkle crumble evenly over the batter.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool slightly before slicing and serving warm or at room temperature.

Notes

  • Chill the butter for a crisper crumble, if desired.
