  • 4 salmon fillets
  • 1/2 cup pomegranate juice
  • 1/3 cup orange juice
  • 2 tbsp honey or maple syrup
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp orange zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pomegranate arils and fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small saucepan, combine pomegranate juice, orange juice, honey, soy sauce, garlic, and orange zest.
  3. Simmer over medium heat for 8–10 minutes, stirring occasionally, until reduced to a syrupy glaze.
  4. Place salmon fillets on the prepared baking sheet and drizzle with olive oil. Season with salt and pepper.
  5. Brush a generous layer of glaze over each fillet.
  6. Bake 12–15 minutes, brushing once more halfway through, until salmon is cooked and caramelized.
  7. Top with pomegranate arils and parsley before serving.
