- Pink Velvet Cookies:
- 1 box white cake mix (15.25 oz)
- 2/3 cup all-purpose flour
- 2 large eggs
- 1/3 cup butter, melted
- 2 Tbsp sour cream
- 1–2 drops pink food coloring
- Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 1/2 tsp vanilla extract
- 3 1/2–4 cups powdered sugar
- 2–3 Tbsp milk, to thin
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix cake mix and flour.
- Add eggs, melted butter, sour cream, and pink food coloring. Mix until a soft dough forms.
- Scoop dough onto the baking sheet, spacing cookies apart.
- Bake for 9–11 minutes until set but still soft. Cool completely.
- For frosting, beat cream cheese and butter until smooth.
- Mix in vanilla extract, then gradually add powdered sugar.
- Add milk as needed until frosting reaches desired consistency.
- Frost cooled cookies and serve.
Notes
- These cookies are best enjoyed the same day, but can be stored in an airtight container for 2–3 days.
- If cookies spread too much, chill the dough for 10–15 minutes before baking.
- Color intensity can be adjusted with more or fewer drops of pink food coloring.
- Make sure frosting is fully cooled before applying to cookies to prevent sliding.
- For a lighter frosting, reduce powdered sugar.
