  • Pink Velvet Cookies:
    • 1 box white cake mix (15.25 oz)
    • 2/3 cup all-purpose flour
    • 2 large eggs
    • 1/3 cup butter, melted
    • 2 Tbsp sour cream
    • 12 drops pink food coloring
  • Cream Cheese Frosting:
    • 8 oz cream cheese, softened
    • 1/4 cup butter, softened
    • 1/2 tsp vanilla extract
    • 3 1/24 cups powdered sugar
    • 23 Tbsp milk, to thin

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix cake mix and flour.
  3. Add eggs, melted butter, sour cream, and pink food coloring. Mix until a soft dough forms.
  4. Scoop dough onto the baking sheet, spacing cookies apart.
  5. Bake for 9–11 minutes until set but still soft. Cool completely.
  6. For frosting, beat cream cheese and butter until smooth.
  7. Mix in vanilla extract, then gradually add powdered sugar.
  8. Add milk as needed until frosting reaches desired consistency.
  9. Frost cooled cookies and serve.

Notes

  • These cookies are best enjoyed the same day, but can be stored in an airtight container for 2–3 days.
  • If cookies spread too much, chill the dough for 10–15 minutes before baking.
  • Color intensity can be adjusted with more or fewer drops of pink food coloring.
  • Make sure frosting is fully cooled before applying to cookies to prevent sliding.
  • For a lighter frosting, reduce powdered sugar.
