Instructions
- Season the beef generously with salt and pepper.
- Heat olive oil in a large pot over medium-high heat and brown beef in batches for deep flavor.
- Add onion, carrots, and celery; cook 4–5 minutes until softened.
- Stir in garlic and tomato paste; cook 1 minute to develop flavor.
- Pour in beef broth and grape juice, then add potatoes, Worcestershire sauce, thyme, rosemary, and bay leaf.
- Bring to a simmer, then cover and cook on low for 1½–2 hours until beef is fork-tender.
- If you want a thicker stew, whisk flour with a few tablespoons of hot broth and stir it in. Simmer 5 more minutes.
- Remove bay leaf, adjust seasoning, and garnish with fresh parsley.
