  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tbsp gluten-free flour or cornstarch
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, cubed
  • 3 cups beef broth (gluten free)
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • Optional garnish: chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season beef with salt, pepper, paprika, and garlic powder, then toss with gluten free flour.
  2. Brown beef in batches until nicely seared. Remove and set aside.
  3. In the same pot, sauté onion, garlic, carrots, and celery for 3–4 minutes.
  4. Stir in tomato paste and cook for 1 minute to deepen flavor.
  5. Return beef to the pot and add potatoes, beef broth, thyme, and bay leaf.
  6. Bring to a gentle boil, then reduce heat to low and cover.
  7. Simmer for 1 hour 30 minutes, stirring occasionally, until beef is tender and stew is thick.
  8. Remove bay leaf, adjust seasoning, garnish with parsley, and serve hot.

Notes

  • Prep ahead: you can brown the meat a day ahead and refrigerate.
  • For a thicker stew, simmer uncovered for an additional 10–15 minutes at the end.
