Description

Moroccan Cauliflower with Tahini-Honey is a warm, aromatic vegetarian side dish that transforms simple roasted cauliflower into a crave-worthy dinner or light main, finished with a rich tahini-honey drizzle and Moroccan spice kick.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp ground cinnamon
  • ½ tsp ground coriander
  • Salt and black pepper to taste

Tahini-Honey Sauce:

  • ¼ cup tahini
  • 2 tbsp honey
  • 2 tbsp lemon juice
  • 1 small clove garlic, minced
  • 23 tbsp warm water, to thin

Optional garnish:

  • Chopped parsley
  • Toasted sesame seeds

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss cauliflower florets with olive oil, cumin, paprika, cinnamon, coriander, salt, and pepper.
  3. Spread evenly on the baking sheet and roast for 30–35 minutes, flipping halfway, until golden and tender.
  4. While cauliflower roasts, whisk tahini, honey, lemon juice, garlic, and warm water until smooth and pourable.
  5. Transfer roasted cauliflower to a serving dish.
  6. Drizzle generously with tahini-honey sauce.
  7. Garnish with parsley and sesame seeds if desired. Serve warm.

Notes

  • Best served warm for maximum aroma and flavor.
  • Adjust honey for sweetness, or omit for a less sweet finish.
  • Make tahini sauce ahead and rewarm before serving.
  • If sauce thickens, whisk in a bit more warm water until pourable.
