- 2 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups cooked shredded chicken
- 1 tsp paprika
- 1 tsp dried parsley
- ½ tsp salt
- ½ tsp black pepper
- 1 cup halal heavy cream or canned coconut milk
- 1 cup chicken broth
- 1½ cups shredded Monterey Jack cheese
- Optional: chopped cilantro or parsley for garnish
Instructions
- Cook spaghetti according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and bell peppers; sauté until softened.
- Stir in garlic, paprika, parsley, salt, and pepper. Cook until fragrant.
- Add shredded chicken, heavy cream, and chicken broth. Simmer for 3–4 minutes.
- Stir in Monterey Jack cheese until melted and creamy.
- Add cooked spaghetti and toss to coat evenly.
- Taste and adjust seasoning. Garnish and serve warm.
