Ingredients

  • 12 oz spaghetti (regular or gluten-free)
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups cooked shredded chicken
  • 1 tsp paprika
  • 1 tsp dried parsley
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup halal heavy cream or canned coconut milk
  • 1 cup chicken broth
  • 1½ cups shredded Monterey Jack cheese
  • Optional: chopped cilantro or parsley for garnish

Instructions

  1. Cook spaghetti according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and bell peppers; sauté until softened.
  3. Stir in garlic, paprika, parsley, salt, and pepper. Cook until fragrant.
  4. Add shredded chicken, heavy cream, and chicken broth. Simmer for 3–4 minutes.
  5. Stir in Monterey Jack cheese until melted and creamy.
  6. Add cooked spaghetti and toss to coat evenly.
  7. Taste and adjust seasoning. Garnish and serve warm.
