- 3 lb beef chuck roast
- 2 tbsp olive oil
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 3 cups baby potatoes
- 3 carrots, cut into chunks
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- Salt and black pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat and sear the chuck roast on all sides until browned.
- Place sliced onion and garlic in the bottom of the crock pot.
- Add potatoes and carrots over the onions.
- Place the seared roast on top of the vegetables.
- In a small bowl, mix beef broth, tomato paste, thyme, rosemary, paprika, salt, and pepper.
- Pour the mixture over the roast.
- Cover and cook on low for 8 hours or until the beef is fork-tender.
- Slice or shred the roast and serve with vegetables and cooking juices.
Notes
- For extra flavor, sear the roast well and deglaze the pan with a splash of beef broth, adding it to the slow cooker.
- Thicken the juices into a gravy by whisking in 1–2 teaspoons of cornstarch mixed with cold water during the last 15 minutes of cooking.
