Ingredients

  • 3 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 3 cups baby potatoes
  • 3 carrots, cut into chunks
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat and sear the chuck roast on all sides until browned.
  2. Place sliced onion and garlic in the bottom of the crock pot.
  3. Add potatoes and carrots over the onions.
  4. Place the seared roast on top of the vegetables.
  5. In a small bowl, mix beef broth, tomato paste, thyme, rosemary, paprika, salt, and pepper.
  6. Pour the mixture over the roast.
  7. Cover and cook on low for 8 hours or until the beef is fork-tender.
  8. Slice or shred the roast and serve with vegetables and cooking juices.

Notes

  • For extra flavor, sear the roast well and deglaze the pan with a splash of beef broth, adding it to the slow cooker.
  • Thicken the juices into a gravy by whisking in 1–2 teaspoons of cornstarch mixed with cold water during the last 15 minutes of cooking.
  • Let the roast rest for 10 minutes before slicing for juicier servings.
