Ingredients

  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • ½ cup sun-dried tomatoes, chopped
  • 2 cans white beans, drained and rinsed
  • ¾ cup vegetable broth
  • ½ cup heavy cream or plant-based cream
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • Salt and black pepper to taste
  • 3 cups fresh spinach
  • ¼ cup grated vegetarian parmesan or plant-based parmesan

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and red pepper flakes and sauté for 30 seconds until fragrant.
  3. Stir in sun-dried tomatoes and cook for 1 minute.
  4. Add white beans, vegetable broth, cream, oregano, basil, salt, and pepper; simmer for 5–7 minutes until the sauce slightly thickens.
  5. Stir in spinach and cook until wilted.
  6. Remove from heat and mix in parmesan until creamy.
  7. Serve warm with crusty bread, pasta, or rice.
