  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk (optional for extra creaminess)
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ cup shredded Parmesan (halal)
  • 2 cups fresh spinach
  • Salt and black pepper to taste
  • Optional: red pepper flakes for heat, extra Parmesan for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté until softened.
  2. Stir in garlic and sun-dried tomatoes; cook for 1 minute until fragrant.
  3. Add shredded chicken, chicken broth, thyme, basil, paprika, garlic powder, salt, and pepper.
  4. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  5. Stir in heavy cream, milk (if using), and Parmesan. Simmer 3–5 minutes until creamy.
  6. Add spinach and let it wilt into the soup.
  7. Taste and adjust seasoning, adding red pepper flakes if desired.
  8. Serve warm with extra Parmesan on top.

Notes

  • For a lighter version, use half-and-half or milk with less cream.
  • To make it dairy-free, substitute coconut cream and dairy-free Parmesan, and use olive oil as fat.
