- 1 tsp dried thyme
- 1 tsp dried basil
- ½ tsp paprika
- ½ tsp garlic powder
- ½ cup shredded Parmesan (halal)
- 2 cups fresh spinach
- Salt and black pepper to taste
- Optional: red pepper flakes for heat, extra Parmesan for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and sauté until softened.
- Stir in garlic and sun-dried tomatoes; cook for 1 minute until fragrant.
- Add shredded chicken, chicken broth, thyme, basil, paprika, garlic powder, salt, and pepper.
- Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
- Stir in heavy cream, milk (if using), and Parmesan. Simmer 3–5 minutes until creamy.
- Add spinach and let it wilt into the soup.
- Taste and adjust seasoning, adding red pepper flakes if desired.

- For a lighter version, use half-and-half or milk with less cream.
