  • ½ cup ricotta cheese
  • ½ cup halal grated Parmesan-style cheese
  • 1 large egg
  • ½ cup almond flour
  • 2 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • Optional: sugar-free marinara sauce for serving, fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground meat, ricotta, Parmesan-style cheese, egg, almond flour, garlic, Italian seasoning, paprika, salt, and pepper. Mix gently until combined.
  3. Shape mixture into evenly sized meatballs and place on the baking sheet.
  4. Lightly brush or spray meatballs with olive oil.
  5. Bake for 18–22 minutes until cooked through and lightly golden.
