- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 large egg
- ½ cup almond flour
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper to taste
- Optional: pinch of paprika or chili flakes
Instructions
- Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
- Steam broccoli for 3–4 minutes until just tender, then finely chop and pat dry.
- In a bowl, combine broccoli, cheddar, mozzarella, egg, almond flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Scoop small portions and shape into rounds, placing them on the baking sheet.
- Gently flatten each round slightly.
- Bake for 18–22 minutes, flipping halfway, until golden and crisp on both sides.
- Cool slightly and serve warm.
Notes
- For extra crispness, bake a few minutes longer or broil for 1–2 minutes at the end.
- These rounds are best served warm; reheat gently in the oven to avoid drying.
