- 2 cups fresh broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 large egg
- ½ cup almond flour
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper to taste
- Optional: pinch of paprika or chili flakes
Instructions
- Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
- Steam broccoli for 3–4 minutes until just tender. Finely chop and squeeze out excess moisture.
- In a bowl, combine broccoli, cheddar, mozzarella, egg, almond flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Scoop small portions and shape into rounds on the baking sheet.
- Gently flatten each round slightly.
- Bake for 18–22 minutes, flipping halfway, until golden and crispy on both sides.
- Cool slightly and serve warm.
Notes
- For crispier rounds, pat the steamed broccoli very dry and squeeze out as much moisture as possible.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for longer storage.
- Substitute shredded mozzarella with part-skim mozzarella or a blend of cheeses if desired.
- Best served warm with a dip or as a side dish.
