Description

Low Carb Broccoli Cheese Rounds: Crispy on the edges, soft and cheesy in the center—these keto-friendly bites are perfect for snacking, sides, or easy meal prep.


Ingredients

  • 2 cups fresh broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 large egg
  • ½ cup almond flour
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • Optional: pinch of paprika or chili flakes

Instructions

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
  2. Steam broccoli for 3–4 minutes until just tender. Finely chop and squeeze out excess moisture.
  3. In a bowl, combine broccoli, cheddar, mozzarella, egg, almond flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Scoop small portions and shape into rounds on the baking sheet.
  5. Gently flatten each round slightly.
  6. Bake for 18–22 minutes, flipping halfway, until golden and crispy on both sides.
  7. Cool slightly and serve warm.

Notes

  • For crispier rounds, pat the steamed broccoli very dry and squeeze out as much moisture as possible.
  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for longer storage.
  • Substitute shredded mozzarella with part-skim mozzarella or a blend of cheeses if desired.
  • Best served warm with a dip or as a side dish.
