Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté for 5–7 minutes until softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in lentils, diced tomatoes, vegetable broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 25–30 minutes, until lentils are tender and the stew thickens. Season with salt and pepper to taste.
  4. Meanwhile, make the mashed potatoes: Boil chopped potatoes in salted water for 15–20 minutes, until fork-tender. Drain and mash with milk, butter, salt, and pepper until creamy.
