Lentil Potato Soup is a cozy, hearty vegan comfort dish that’s budget-friendly and perfect for weeknight dinners or relaxed weekend meals.

- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 cups potatoes, peeled and cubed
- 1 cup green or brown lentils, rinsed
- 1 can diced tomatoes (14–15 oz)
- 5 cups vegetable broth
- 1 tsp dried thyme
- ½ tsp paprika
- Salt and black pepper to taste
- Optional: fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and carrots and sauté until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add potatoes, lentils, diced tomatoes, vegetable broth, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes until lentils and potatoes are tender.
- Taste and adjust seasoning as needed.
- Serve warm, garnished with fresh parsley if desired.
Notes
- You can substitute red potatoes or Yukon gold for a slightly different texture.
- For a thicker soup, mash 1-2 cups of the soup and stir back in.
- This soup is vegan and gluten-free as written (use gluten-free vegetable broth).
- Garnish with fresh parsley or a drizzle of olive oil, if desired.
