Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green or brown lentils, rinsed
  • 1 can diced tomatoes (1415 oz)
  • 6 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp thyme
  • Salt and black pepper to taste
  • 1 cup small pasta (ditalini or elbow)
  • 1 cup chopped spinach or kale
  • Optional: fresh parsley or basil for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté until softened.
  2. Stir in garlic and zucchini and cook for 1 minute until fragrant.
  3. Add lentils, diced tomatoes, vegetable broth, oregano, basil, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in pasta and cook until pasta and lentils are tender.
  6. Add spinach or kale and cook for 2–3 minutes until wilted.
  7. Taste and adjust seasoning, then serve warm.

Notes

  • Leftover soup tastes even better the next day—the flavors deepen after the pasta and lentils meld with the vegetables.
  • Stores well in the fridge for 3–4 days or freezes for up to 3 months. Reheat gently on the stove, adding a splash of broth if needed.
  • Make gluten-free by using gluten-free pasta, or omit pasta for a lentil-forward soup.
  • Want more greens? Stir in a handful of spinach or kale at the end.
