Ingredients
Scale
- 6 cups Rice Krispies cereal
- 4 cups mini marshmallows
- 3 tbsp unsalted butter
- 1 tbsp key lime zest
- 2 tbsp fresh key lime juice (or regular lime juice)
- ½ cup white chocolate chips
- ¼ tsp salt
- Optional: crushed graham crackers for topping
Instructions
- Lightly grease an 8×8-inch pan and set aside.
- Melt butter in a large pot over low heat.
- Add marshmallows and stir until fully melted and smooth.
- Remove from heat and stir in lime zest, lime juice, white chocolate chips, and salt until combined.
- Gently fold in Rice Krispies cereal until evenly coated.
- Press mixture firmly into the prepared pan.
- Optional: Sprinkle crushed graham crackers over the top and gently press in.
- Chill until set, then cut into squares and serve.
Notes
- For extra tang, increase lime zest to 1½ teaspoons.
- If you can’t find key lime juice, regular lime juice works fine.
- Chill time helps the bars set quickly and cut neatly.
- Graham cracker topping adds a classic pie crust vibe; skip if dairy-free or gluten-free is required.
