Ingredients

  • 1 tbsp olive oil
  • 1 small onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 8 slices halal provolone or Monterey Jack cheese
  • ½ cup shredded mozzarella or Monterey Jack cheese
  • Optional: sugar-free steak sauce or keto-friendly mayo for serving

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add onion and bell pepper and sauté until soft.
  3. Add ground beef, garlic powder, paprika, salt, and pepper. Cook until browned, breaking it apart.
  4. Lay cheese slices slightly overlapping on the parchment to form rectangles.
  5. Spoon beef mixture evenly over the cheese slices and sprinkle with shredded cheese.
  6. Carefully roll up each portion into tight roll-ups.
  7. Bake for 20–25 minutes until cheese is melted and lightly golden.
