- 1 tbsp olive oil
- 1 small onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 tsp garlic powder
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 8 slices halal provolone or Monterey Jack cheese
- ½ cup shredded mozzarella or Monterey Jack cheese
- Optional: sugar-free steak sauce or keto-friendly mayo for serving
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Add onion and bell pepper and sauté until soft.
- Add ground beef, garlic powder, paprika, salt, and pepper. Cook until browned, breaking it apart.
- Lay cheese slices slightly overlapping on the parchment to form rectangles.
- Spoon beef mixture evenly over the cheese slices and sprinkle with shredded cheese.
- Carefully roll up each portion into tight roll-ups.
- Bake for 20–25 minutes until cheese is melted and lightly golden.
- Rest for 5 minutes before serving. Slice and enjoy.
